Mango Jam

Ingredients

Mango - 4 medium sized, fully ripe
Sugar - 1 cup for 3 cups of mango pulp
Lemon juice - 1 table spoon


Method

Peel, cut the mangoes and make juice out of them. This is the pulp measure and pour into a cooker. For 3 cups of pulp one cup of sugar. Add more if the mangoes taste less sweet. Add little water, about one table spoon in the cooker. Switch on the stove and let the cooker go for 6-8 whistles. Switch off, allow to cool and open. Now stir well and switch on the stove. Keep stirring at regular intervals until the colour changes and the consistency becomes thick. If you drop a spook of jam onto a plate it should stay and not run down when you hold it slightly titled. Allow to cool and pour it into a glass contanier.

Cuisine - Dessert
Serves - 1 bottle about 500 gms of jam

Tips
Ensure no water and keep stirring regularly. Adjust sugar as per the sweetness of the mango.

Semiya payasam

Ingredients

Semiya - 1 cup
Water - 3/4 cup
Sugar - 1 cup
Milk - 3-5 cups
Cashew and Raisins for garnishing

Method

Dry toast semiya for 5 minutes and keep it aside. Add water in a kadai and bring to boil and add the roasted semiya. Once the semiya is 50% cooked (should become little soft) add 3 cups of milk and keep stirring occasionally. Once the semiya is fully cooked add sugar and milk as necessary and continue to cook. Switch off once the semiya is fully cooked. Garnish with cashews and raisins raw or roast them in ghee and use.

Tips
Entire process would take about 30 minutes

Serves - 7 cups

Home made Panner

Ingredients
Milk - 1/2 Litre
Lemon - 1

Method

Bring milk to boil in a vessel. Once it starts boiling switch off the stove and add lemon. First add 1/2 lemon and stir, check if the milk cuddles. If no, add further 1/2 and continue to stir. Filter with a thin cloth. Pour some water to dilute the lemon taste. Squeeze out the water and place a heavy object on top. I generally use a dosa tava. After half hour check if it has set and refrigerate it with the cloth.

Tips
Use full cream milk.
Adding lemon after switching off the stove makes the panner softer
